    Mexican food is my very favourite! What do you like? I love Enchiladas, and Pico de Gallo a lot..pretty much anything.

    Yeah, all Mexican food is pretty great and you should really try all the different varieties from all around the country, especially things you don't find much in the US. Cochinita Pibil from the Yucatan is very, very good. Tlayudas ("Oaxaca pizza") also extremely delicious!

    But for me the best is mixiote (meesh-yeOH-tay)! This is a dish of either chicken, rabbit or lamb covered in an adobo or red Oaxaca mole sauce often with chopped nopal added, wrapped in a thin "paper" peeled from the maguay cactus and slow cooked in the oven.

    I prefer the lamb although for large groups the chicken is adequate too, but lamb is best. It is excellent served with Mexican white rice but really best eaten in tacos! Mmmmm Boy am I hungry!

    It is common from the state of Hidalgo down into Oaxaca, but you can find it all over the D.F. Most neighborhood markets will have a stand that sells "take away" freshly cooked for about $7.00 per pound! (or large tacos for $1.00)

    If you love Mexican food, you are really gonna love mixiote!

    Montados (north), enchiladas suizas, carne asada, chilaca con queso (north), pooc chuc (Yucatan), chorizo con queso, salbutes, panuchos, almost all Yucatecan food, quesadillas con chilorio (Sinaloan), grilled fish (Cancun), fish filet in a three cheese sauce, fish filet in a cilantro sauce (Yucatan), Cuban pork or chicken (Oaxacan), Barbacoa (both suthern and nothern), tacos al pastor, etc....Man I almost miss mixiote....
