    I want to more cultural dishes that are easy to make. Arethere any you know of that are vegan?

    1. Roasted hot green chiles --- peeled and diced
    2. Fresh mushrooms ---- diced
    3. Soy milk
    4. Soy cheese -- grated--cheddar flavor
    5. Corn starch
    6. Corn Tortillas --- 12 count

    Heat oven to 350........

    Heat the soy milk,,,,,,add some corn starch.....make a thick gravy out of it.....add the mushrooms and chiles........

    Spoon some of the above into the bottom of a square cake pan......greased with oil of your preference. Lay 2 whole and two half corn tortillas in bottom....spoon some more mix from above......sprinkle the soy cheese.....go ahead and continue the layers this way. You can even add more chiles......for your liking and mushrooms too.

    Cover with tin foil and bake for 45 minutes.
