    You cannot find a more complete protein, a great blood sugar reducer and a complete meal additive, I am a former chef and now a lacto-ovo vegetarian due to a medical condition, I use a number, red, green, blue poule, small green greek lenithi and even split Indian dals so many I cannot list.

    I make soups, currys, cook them and make patties, burgers, meatloaf like items, even can be used as a sweet item, made like rice pudding either with milk or non dairy items, try them in a salad with other veg like the 3 bean salad you had as a youngster.

    My favorite:

    Lentil Vegetable Soup

    1-2 stalks celery
    3 carrots
    1 large onion
    3 red potatoes
    1 1/2 - 2 cups green lentils
    3-4 cloves garlic
    3 bay leaves
    1 Tbsp. olive oil
    1 Tbsp. Italian herb mix
    1 bunch spinach
    1 tsp. salt
    7-8 cups water
    3 Tbsp. red wine vinegar

    Chop carrots, celery, onion, and garlic. Heat oil in a large soup pot. Add vegetables and bay leaves. Cook on medium until vegetables are soft. Add water, herbs, and lentils. Cook on medium-high for 45 minutes, adding more water when needed.

    Chop potatoes into small cubes, add to the soup and cook until soft, about 10-12 minutes. Add spinach leaves and cook 2 minutes more, just enough to wilt the leaves. Remove from heat. Stir in red wine vinegar and leave covered until ready to serve.

    no super great recipies, because I don't make it very often, but yes, I DO enjoy a good lentil soup.. Very much so

    I do have a "recipie" for another fun lentil dish. I call it "lentil tostatas" The vegetarian boarding school I went to served it.. it's tasty!

    basically you:

    1. toast bread
    2. put sour cream (or vegan sour cream) on the hot toasted bread (like you're "buttering" it) place open face on a plate
    3. Put hot, cooked lentils on top (well cooked, not TOO dry, but not too soupy either.. lightly seasoned if you wanted, definitely appropriately salted
    4. Top with shredded lettuce, very finely diced tomatoes, shredded cheese (or vegan cheese) and pour a bit of your fav salad dressing

    May sound funny, but really, it's quite yummy when you get all those flavors combined!!

    Man, now I want some LOL.. GRRR @ lentils taking so long to cook! (as a single person who works 8 hours, I have to eat "fast" things LOL)

    There's an awesome lentil soup recipe in "How it All Vegan!" It has tomatoes, veggies, and pasta. It's very hearty and delicious. I think it's called Rustic Lentil Soup.
